If I use the symbol font in Indesign (with same symbols such as beta and mu), i cannot format it to bold or italicized or anything else.
If i try to format the characters, they become undefined (the font changes into a square box) and i cannot make any changes.
Any idea on how i can avoid this? is there a different font or is there a specific way to format the font? i am writing a technical protocol and need to use a lot of symbols.

There is no true bold or italic for the symbol font, and ID doesn't do faux bold or italic like Word, Quark and Pagemaker.
Pick another font. Most of the ''Pro'' flavored OpenType fonts that came with InDesign should have basic Greek symbols.

I use Warnock Pro for Greek symbols for my client who is used to seeing them rendered with the Symbol font. I find the ones in Myriad Pro to be particularly poor. The alpha looks like a lowercase a and there's one other that looks like a regular letter, but it's been a while and I forget which right now.

To make symbol font bold, select the characters, then stroke.

This doesn't actually choose a bold variant of Symbol. It just puts a
stroke on the outline of the glyph, making it appear fatter. There's a
big difference between bold and fat.
You're much better off finding a font with greek that has a true bold
variant.
